@sandy.in.the.kitchen chicken fajita bowls with crispy kale 🥬 sooo if im being HONEST, i have to admit that sheet pan meals have always sacred me a little bit. i feel like theyre so hard to serve equally (a problem liam can confirm i do in fact struggle with LOL), and that *really* came to a head monday night when i was serving up dinner. but! it left me with an idea… why not split the pan like i do with loaded fries/nachos ???? literally *nothings* stopping me (esp not the 1000sqft roll of aluminum foil i accidentally bought from costco 😅)…and it worked like an absolute CHARM !!! problem solved :) i really cant get across how much it helps, especially if youre meal prepping or trying to hit specific macro goals (protein intake 🙋♀️)…major life hack ‼️ once the pan was prepped, i thickly sliced both a red and green bell pepper, poblano pepper, jalapeno, and a yellow onion, then tossing them into a bowl with 1T fajita seasoning + 1T smoked paprika. i set 2 chicken thighs on both sides of my sheet pan and seasoned again w the same blend. i surrounded the chicken w the vegetables, added a can of drained + rinsed black beans, and poured 1/4c chicken broth onto each side of the pan. into the oven, bottom rack, at 425 for 15min note: no oil was used here! i always find when i pair a fatty cut of meat with some broth, no extra oil is needed because the juice from the chicken will disperse to the rest of the pan (carried by the broth), allowing the veggies to cook in the chicken fat and get an almost buttery taste :) while the chicken started, i dry massaged the remaining kale from the other night (~4c). i added 1T smoked paprika + 1t evoo, then massaged again to reduce in size. after the 15min, i removed the chicken, topped with the kale, and returned to the oven for another 20min while it wasnt the prettiest meal ever, these chicken fajita kale bowls were SO tasty and SO filling !!! it was another meal that was done in just about an hr (unfortunately my oven takes 30min to preheat, so ~1hr 5min 🙃), but honestly it tasted like it totally could have taken SO much more effort; its hard to believe it all cooked ~so~ beautifully on one pan <3 perfect meal for a busy weeknight !
